Description:

Pipe fittings in certain views were grayed out and could not be selected, making it impossible to edit or work with them.

Solutions:

Cause:

The affected views had an Underlay enabled. When the underlay was active, the fittings and pipes appeared grayed out and became un-selectable. 
Solution:

Create a Duplicate View (without detailing), then modify the duplicate view, set the Underlay property to None. Once the underlay is removed, the pipe fittings and pipes become fully visible and selectable again. 
If needed, coordinate with the user who owns the original view (if it isn't you) to update or remove the original underlay settings.
